I absolutely love my Vitamix. It’s one of those rare kitchen machines that truly earns its counter space. It juices, crushes, minces, chops, powders, grinds, and of course, blends. Cleanup is effortless, which is always a win. I know this probably sounds like a Vitamix infomercial, and if they happen to be listening, they might as well pay me for it.

I’ve been making this smoothie on hectic mornings and as a post-workout pick-me-up, and it’s easily one of my all-time favorite smoothie recipes. The original version comes from the Vitamix website, with just a few small tweaks to suit our taste.

Apple Pie in a Glass

Ingredients

  • 6 oz 100% apple juice concentrate, thawed
    (or 10 oz regular apple juice)
  • 6 oz vanilla soy milk
  • 1 fresh Fuji apple, quartered
  • 2 full sheets (4 connected crackers) low-fat graham crackers
  • 4–5 baby carrots
  • 1/4 inch slice of cabbage
    (use a very small slice—more than 1 oz but less than 2 oz)
  • 1/2 cup non-fat dried milk
  • 3–4 shakes ground cinnamon
  • 1 capful pure vanilla extract
  • A small squirt of honey or agave nectar
  • 3 cups ice

Method

Place all the ingredients into the Vitamix container. Secure the lid firmly and blend on high speed for about 1 minute, or until the contents are circulating smoothly downward toward the blades. The texture should be thick, creamy, and evenly blended.

Serve immediately and enjoy.

Vitamix Tip

When making thick drinks in the Vitamix, a helpful rule of thumb is the 50/50 ratio:

  • 50% frozen ingredients
  • 50% non-frozen ingredients

This balance helps the mixture blend smoothly and prevents air pockets. Using the tamper is also key when working with thicker blends. Insert it through the lid and move it gently up and down and side to side. This helps push the thicker portions toward the blades, allowing the contents to form a proper vortex—moving up the sides, across the top, and back down through the center for an even blend.
