Continuing with the cookie series, here’s another kind that I made for the birthday party. Nutty, buttery and delicious!
Ingredients:
1 cup all purpose flour
3/4 cup pecans
1/2 cup (1 stick) unsalted butter
1/3 cup sugar (plus some for coating)
1 tsp vanilla extract

Method:
1. Preheat oven to 350F.
2. Microwave the pecans on high for about 40 sec to 1 min till they get a little crisp and fragrant.
3. Cream the butter and sugar in an electric stand mixer until light and fluffy (for about 1 min)
4. Mix in the vanilla, salt and flour, until the dough comes together. Mix in the pecans.
5. Make 12-15 equal pieces of the dough, shape into balls and roll in some of the sugar. Place 3 inches apart on a baking sheet. Flatten a little.
6. Bake until golden brown for about 15 minutes. Rotate sheet halfway so all sides get baked evenly. Cool the cookies on a wire rack.
